
So tonight my wife and I started to watch the Harry Potter Series. We are on the Goblet of Fire when my wife said she really wanted some chocolate. Well, I have always been afraid of Chocolate because I have always been a Chocoholic. In fact, as I mentioned in my book "3 Hot's & A Cot" on Amazon, I used M&M's as my substitute when I tried to quit smoking some 20 years ago. The problem I had is when I finally quit, I also became a diabetic with all of the carbs & candy I had in my body. I was a diabetic for over 18 years on medication...now that I am no longer a diabetic, I have no intentions of going bacwards. As a part of my alternative cooking, I found this recipe. I wish I could claim it as mine but it is not. It belongs to a women named Julia and it has become my Chocoholic Salvation.
If you are a Diabetic or just someone who is cutting back on carbs...this recipe may be for you. Oh...please do not use processed sugar. When you make this you really want to use a healthy alternative sweetner like xylitol, erithitol, swerve, stevia or turvia...none of these will spike your sugar or glucose level. As with all sweetners, please use them in moderation.
I made this Chocolate Bark! I made this recipe to satisfy my taste so the base is the same but I used my nuts of choice. So I added in unsalted roasted pecans, unsalted roasted cashews and unsalted roasted peanuts. I used truvia and I doubled the recipe. Wow, once it cooled down and I put it in the freezer, it came out great. Not peanut brittle but more like chocolate brittle. Chocolate Bark is a good name for it. I really like this and it’s going to be a regular part of my chocoholic dessert.

It only has 5 ingredients but I guess you can put in as many as you want. Mine has nuts, coconut shavings, coconut oil, cocoa powder and truvia. Once it cooled down I put it in the freezer and it set in 15 minutes. No fuss and delicious. If you use stevia, xylitol, turvia, swerve or another healthy sweatner this will not spike a diabetics sugar but like with all good things…moderation!

Chocolate ‘bark’ with Virgin coconut oil
4 T. (1/4 cup) Virgin Coconut Oil (I used Nutiva Coconut Oil) 1-T. Cocoa Powder 1/4 t. lowcarb sweetener, such as stevia (I used about 3 teaspoons of Truvia, but it’s not concentrated) 2 oz sliced almonds optional (I threw in some of my chopped Roasted Almonds) 2 oz coconut flakes optional. Melt the coconut oil on low heat adding in the cocoa powder and sweatner slowly stiring. Once it is all in-cooperated add in nuts and coconut flakes. Let cool and refridgerator or freezer.
I recommend this as a great treat with less calories and healthy eating.
Virgin Coconut Oil is also very beneficial for Diabetic Person, its a great natural Resource
