Homemade Healthy Granola at OneTrueMedia.com

This is my personal recipe for granola.

Chocolate for Chocoholics and Diabetics

So tonight my wife and I started to watch the Harry Potter Series. We are on the Goblet of Fire when my wife said she really wanted some chocolate. Well, I have always been afraid of Chocolate because I have always been a Chocoholic. In fact, as I mentioned in my book "3 Hot's & A Cot" on Amazon, I used M&M's as my substitute when I tried to quit smoking some 20 years ago. The problem I had is when I finally quit, I also became a diabetic with all of the carbs & candy I had in my body. I was a diabetic for over 18 years on medication...now that I am no longer a diabetic, I have no intentions of going bacwards. As a part of my alternative cooking, I found this recipe. I wish I could claim it as mine but it is not. It belongs to a women named Julia and it has become my Chocoholic Salvation.

If you are a Diabetic or just someone who is cutting back on carbs...this recipe may be for you. Oh...please do not use processed sugar. When you make this you really want to use a healthy alternative sweetner like xylitol, erithitol, swerve, stevia or turvia...none of these will spike your sugar or glucose level. As with all sweetners, please use them in moderation.

I made this Chocolate Bark! I made this recipe to satisfy my taste so the base is the same but I used my nuts of choice. So I added in unsalted roasted pecans, unsalted roasted cashews and unsalted roasted peanuts. I used truvia and I doubled the recipe. Wow, once it cooled down and I put it in the freezer, it came out great. Not peanut brittle but more like chocolate brittle. Chocolate Bark is a good name for it. I really like this and it’s going to be a regular part of my chocoholic dessert.

It only has 5 ingredients but I guess you can put in as many as you want. Mine has nuts, coconut shavings, coconut oil, cocoa powder and truvia. Once it cooled down I put it in the freezer and it set in 15 minutes. No fuss and delicious. If you use stevia, xylitol, turvia, swerve or another healthy sweatner this will not spike a diabetics sugar but like with all good things…moderation!

I would love to take credit for this recipe but it belongs to Julia from the blog I found. Her recipe is:

Chocolate ‘bark’ with Virgin coconut oil

4 T. (1/4 cup) Virgin Coconut Oil (I used Nutiva Coconut Oil) 1-T. Cocoa Powder 1/4 t. lowcarb sweetener, such as stevia (I used about 3 teaspoons of Truvia, but it’s not concentrated) 2 oz sliced almonds optional (I threw in some of my chopped Roasted Almonds) 2 oz coconut flakes optional. Melt the coconut oil on low heat adding in the cocoa powder and sweatner slowly stiring. Once it is all in-cooperated add in nuts and coconut flakes. Let cool and refridgerator or freezer.

I recommend this as a great treat with less calories and healthy eating.

Jucing Organic

This morning we woke up early and had a nice breakfast. Egg's, toast with butter and crock pot pork roast. We had a good size breakfast since we wanted to make sure we had time to burn this off today. Then we were off to shop. First, we bought 25 pounds of organic carrots. Yes, thats right...25 pounds. Since we have begun our juicing, we realized how fast we go through apples and carrots.

Second, organic apples. So we bought 10 pounds of apples, 5 pounds of red delicious and 5 pounds of green granny. Then we picked up some organic lemons and organic romas.

Okay, I know that some folks complain about everything under the sun. It's painful to go through withdrawls when I detox. It's no fun washing the jucier each time I juice. I want real food (processed). Heehee...it's amazing how many people would rather stay sick, stay over-weight, stay on medication, stay sick with diabeties and high blood pressure without any sacrifice. Well, I know that when I was taking medications for over 18 years and told there was no cure for diabeties to losing 100 pounds, no longer diabetic, taken off medications...all of that little stuff like detox, washing and process foods that I gave up has paid off. So for all of those not willing to make a change in your life for the best...all I can say is we all make a choice. If being healthy gives me 3 or 4 years of extended life so that I can enjoy my grandchildren and be a part of their lives, then it is all worth it.

Romantic Dinner

I came home from work and my wife asked me if I wanted to take a nap to get me ready for my long weekend off. She had told me she took out a Pork Roast but she had not decided if she would could it tomorrow in the crock pot or if she would make steaks out of it. So when I woke up from my 2 hour nap, she had pork steaks on the griddle.

I immediately had a quart of Green Drink (Wheatgrass/Spirulina) and I started to help her in the kitchen. One of the things we enjoy doing is helping eachother and cooking together. So while she prepared the steaks on the griddle I chopped some cabbage, sliced zucchini, avocado and tomato. She had put a dry rub on the pork steaks which consisted of garlic powder, northwestern spice and roast spice.

Once everything was done and we plated, asked me if I wanted to eat in bed and watch a movie. Now last week during the Christmas/New Years holidays we had dinner in bed and the next morning we had a romantic breakfast in bed. I think she has the same thing in mind. It is so nice to know that she can still be romantic with me as we get ready to approach our late 50's. Ever since we started to eat right, lose weight and take care of eachother...romance has gotten so much better. What a gift to have with the one you love.

Diner in bed was fabulous. She said she had some peach/banana ice cream in the freezer for dessert. I look forward to an enjoyable evening. Until next time...Bon Appetit

Happy New Years

Happy New Year Everyone! The Best of Times-The Worse of Times: Well, on New Years Eve my wife and I wanted to go out shopping in the snow covered roads and buy our groceries plus pay some bills. So we get in my 4 Wheel Drive SUV and drive to the bank. As my wife is in the bank and I was waiting for her in the SUV, my radio goes out. What? No radio, then all the lights on my dashboard light up! What??? Then my SUV shuts down and doesn't want to start.

My wife comes out and she see's my face and I must of had a look like a deer in the head lights so she says' What's Wrong! I told her the car shut down and through some miracle...it started. I was about 2 miles from home so I drove home and when I got to the driveway and parked, my SUV started to overheat. My driveway now had all of my antifreeze boiling and overflow all over.

So we call my friend...he's a mechanic. He says he will be over on New Years day and see what the damage is. So we take our non-4 wheel drive mini van to the store. We had planned on New York Strip Steaks for dinner on the 1st but since our friends were coming over we decided to had chicken and cabbage.

They came over around lunch time on New Years. We expected the worse on my SUV. He opened the hood and to my surprise he found my fan belt broken. So we went to the Auto Parts store and we got new belts for the vehicle. We also replaced all of the antifreeze. She is running like a charm...so where is the problem here. Well, what happened to the steaks?

With everything going on we just forgot about not having them. So this morning I went to work at 3:30am and I got home from work at 1:00pm. It was a short day and my wife had the steaks out. I also had some sliced tomato and zucchini. To drink was cucumber-chia seed water with a slice of lemon.

So what happened here...I think 2012 went out like a storm and 2013 came in like a light! I hope the rest of the year goes like it has on New Years Day...my SUV is working. My Radiator/Fan Belt, $7.99 and 30 minutes of work.

Time To Juice

Yesterday evening my wife and I made a commentment to eachother to start using the Juicer we purchased a few years ago. So last night I had my Green Drink of Spirulina and Wheatgrass. Spirulina and Wheatgrass are my staple drink because I normally have one to start my day every morning.

Last night I told my wife that I was going to start using our Jay Kordich juicer and I wanted to everyday and to my surprise she agreed to do this with me. Now, I am not doing the Juicing Fast or “Fat, Sick and Nearly Dead” movie. No…I am not doing that. I am going to juice and I am going to have a juice before every meal. So last night I filled my quart mason jar with my Green Drink. I drank it down and then later that evening I had another. Oh my, it went through my system fast and I must have gotten up 5 times last night to use the restroom.

This morning I had a quart of Wheatgrass/Spirulina and I had 2 scrambled eggs. Afterward I drank another quart of water. For Lunch I had another Wheatgrass/Spirulina and my wife and I went to buy some veggies and fruit plus our regular groceries. So we picked up some organic carrots, apples, cucumbers, kale, lemons, spinach,tomato, romaine lettuce, ginger, radishes, cilantro and some more stuff. Now we already had lots of fruit in the house so this was not an issue for us.

When I got home I made a 8 ounces of Liver Cleanse (Carrots, Apples & Beet). Then I had another 8 ounces of Green Drink. Then it was dinner time…my wife decided to bake boneless/skinless chicken breast and sliced tomato. So before dinner I had another 8 ounces of juice (Canteloupe & Carrots). With my dinner I had another quart of Green Drink SpirulinaWheatgrass. Okay, I enjoyed my dinner but I felt so stuffed that it was rediculous.

Alright…so whats the damage today? Well Breakfast was 195 calories, Lunch was my juice & Green Drink and 196 calories, Dinner was 346 calories with the Chicken & 1/2 Tomato. So the Damage today was 737 calories. I have such a big feeling of fullness. Now, I know that many people who have not detoxed or had serious changes in their eating intake or consuming process garbage normally would have a hard time with what we are doing…as for us, we do not expect to go through any of those symptoms. What we do know is we are going to start adding more and more juicing to our days. This is our committment to eachother…another gift for Us. As I told my wife, I am not doing this for her and she is not doing this for me…I am doing this for me and she is doing this for her. It’s a time in our life that we take the time to give ourself a gift. It may be greedy of us but it is what we choose to do.

More Than Meets The Eye!

Have you ever had a craving for something you like but you know is bad for you? Well, I had one of those last night. My wife took out some boneless-skinless chicken breast and since we were having a relax day she really didn't want to cook but I got the craving fever. I know this feeling because I had fried chicken on my mind all day.

So the first thing I did was put the chicken in aluminum foil and I got my mallet and pounded the chicken breast until it was about 1/2 inch think. It made the chicken breast very big. I also got 3 large containers. One container had egg wash with pepper, garlic powder and southwestern spices. The second container had oat flower with more fresh ground pepper and the third container had panko. I had coconut oil melting in my fryer so as soon as the oil was hot, I dipped the chicken breast in the flour, egg wash then the panko. Then I put it in the oil. It didn't take long with hot oil so the chicken was nice and golden fried. This was a hugh chicken breast and now I was worried that we did not have a plate big enough for this monster.

My wife decided to make some veggies (peas and broccoli) so while she was making that I though...hmm. Then it came to me. Are you kidding me? How about Chicken Fried Steaks with gravy. So immediately I started to take out a little bit of oat flour, I added pepper & garlic powder and more southwestern spices in the flour. I added milk and started to blend it all together, finally putting it in all the yummy left over coconut oil in the pan we used for the chicken. Wow...I put that over my chicken breast and had a wonderful Country Fried Chicken Breast with oat flour gravy. Beans and veggies on the side.

Okay, full disclosure: I know it was only one chicken breast but after pounding it out and frying it...this was so big I could not eat it all. It was Gianormous! You can make a healthier meal but all in all this was not that unhealthy. I am always looking for alternatives to making my meals more healthy. This was pretty good...even though it felt like I was over eatting. Well I have to look at the whole picture...now I will have chicken fried steak with gravy and eggs for breakfast...Thank God!
